Burrito Jackfruit Bowl


1 Pack amavida Jackfruit chunks

1 Can of black beans

1 Pack of Tomato paste

1 red onion

Chilli flakes

1 Pinch Himalayan salt/sea salt

1 Cup of Brown rice

1 Cube Veg stock

1/2 Cup of Coconut yogurt

For salad-

Shredded cabbage

Peeled courgette

Chopped tomatoes

Sweetcorn frozen or canned




  1. Cook jackfruit chunks in tiny bit of water on pan until tender and pulls apart
  2. Add chopped red onion, tomato paste, beans, 1 cup of water
  3. Mix together and let cook for another 10-15 min. Add chilli flakes, salt and pepper if desired.
  4. Meanwhile cook your choice of rice with 1 cube of veg stock until soft
  5. Once rice is ready serve in coconut bowls and then top with jackfruit burrito mixture on top
  6. Make salad by mixing salad ingredients together and add into your bowl
  7. Make ‘sour cream’ by mixing plain coconut yogurt and sea salt in bowl
  8. Top your burrito bowl with ‘sour coconut cream and coriander.
