
Ingredients
1 Pack amavida Jackfruit chunks
1 Can of black beans
1 Pack of Tomato paste
1 red onion
Chilli flakes
1 Pinch Himalayan salt/sea salt
1 Cup of Brown rice
1 Cube Veg stock
1/2 Cup of Coconut yogurt
For salad-
Shredded cabbage
Peeled courgette
Chopped tomatoes
Sweetcorn frozen or canned
Spinach
Coriander
Method
- Cook jackfruit chunks in tiny bit of water on pan until tender and pulls apart
- Add chopped red onion, tomato paste, beans, 1 cup of water
- Mix together and let cook for another 10-15 min. Add chilli flakes, salt and pepper if desired.
- Meanwhile cook your choice of rice with 1 cube of veg stock until soft
- Once rice is ready serve in coconut bowls and then top with jackfruit burrito mixture on top
- Make salad by mixing salad ingredients together and add into your bowl
- Make ‘sour cream’ by mixing plain coconut yogurt and sea salt in bowl
- Top your burrito bowl with ‘sour coconut cream and coriander.
